Instructions
Add the warm water, yeast, and sugar to a large bowl. Allow to sit for 5 minutes until yeast blooms, and begins to foam. Add the flour, salt, and garlic powder to the bowl. Mix well with a wooden spoon to combine the dough.
Knead the dough for about 5 minutes, adding more flour if the dough is sticking to your hands. Place the kneaded dough back into the bowl. Pour 2 tablespoons of the olive oil over the dough, and flip the dough to make sure it's well coated in the olive oil. Cover and let rest for 1 hour.
When ready to bake, preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Divide the dough in half, and each of the halves into 8 pieces. This recipe makes 16 knots. Take the dough for one knot, and roll it into a 9 or 10 inch strip with your palms. Take the two ends of the dough: make a loop with one end, and feed the other end through the loop to make a knot. Like you're completing the first step of tying your shoes. Place the knot on the baking sheet, and repeat until all the knots are tied.
Place the baking sheet in the oven, and bake for 18-24 minutes until the garlic knots are golden brown on top. Remove from oven.
Brush each garlic knot with olive oil, and top with raw garlic and parsley or chili flakes if desired. Mangia!
