This spicy pineapple salad is a bright and refreshing appetizer - with jalapeno peppers, cilantro, and a fresh lime vinaigrette dressing. It's sweet and perfectly spiced, a fantastic summer salad that's great to make in the winter to brighten up your table.
1large pineapplecored, peeled, and sliced (about 3 cups)
1large jalapeno pepperthinly sliced
1/2cupcilantrochopped
PinchSea Salt
1/4teaspoonfresh cracked pepper
1tablespoonextra virgin olive oil
2limesjuiced, about 2 tablespoons
1teaspoonhoney
Instructions
Remove tough outer skin from pineapple, and remove the core from the fruit. You'll be left with the soft inner fruit. Slice into rings, and then into bite-sized pieces. Place them on a plate or bowl.
Add the thinly sliced (or chopped) jalapeno peppers, cilantro, salt and pepper.
In a small bowl, add the olive oil, lime juice, and honey - whisk well to combine. Pour the dressing over the salad.
Serve immediately, or cover and refrigerate up to 4 hours before serving.
