This beet powder hummus is a bright, tasty, and good-for-you snack! Hummus made with beet powder, chickpeas, garlic, and spices.  This is one vegan, gluten free, and beautiful snack to enjoy.

Ingredients
  

  • 2 tablespoons beet powder
  • 2 14 ounce cans No-Salt-Added Chickpeas drained and rinsed
  • 4 cloves garlic
  • 1/4 cup hulled pumpkin seeds, or pepitas or substitute another neutral nut like walnuts or pine nuts
  • 1 lemon juiced
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • Sea Salt and Black Pepper

Instructions
 

  • Add all ingredients to a blender or food processor.  Start by blending or pulsing on low speed, and ramp it up to medium/high until all ingredients are well mixed into a creamy hummus.
  • Place hummus in a serving dish and top with extra olive oil and hulled pumpkin seeds.
  • Dip bread, crackers, or vegetables into this sweet and creamy hummus, enjoy!
