Mediterranean Veggie Toast

This Mediterranean Veggie Toast is topped with fresh marinated vegetables and makes an easy and light breakfast or lunch!  A great no-cook meal that is perfect for a simple and delicious breakfast, lunch, dinner, or snack!

Ingredients
  

  • 1/2 cucumber chopped
  • 2 radishes sliced
  • 1/4 cup red onion sliced
  • 1 fresh tomatoes diced
  • 1/3 cup red wine vinegar
  • 1 teaspoon sugar
  • 2 green onions chopped
  • 4 slices bread use gluten free if GF
  • 1/2 cup hummus

Instructions
 

  • In a bowl, add the cucumber, radishes, tomato, red wine vinegar, sugar, and green onions. Allow to sit and quickly marinate for 5 minutes.
  • Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  • Add a scoop of the marinated Vegetables to the top of each toast, garnishing with extra green onions or chickpeas if desired.
  • Serve as a light breakfast or lunch, and enjoy!

Notes

For this recipe, you can use homemade hummus or just store bought. I love hummus because it's such a versatile dip and you can add any flavors you'd like!  I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even an oil free hummus in the instant pot.
