1.5cupsplain unsweetened Greek Yogurtuse dairy free for vegan version
1cupcucumberchopped
2clovesgarlicminced
2tablespoonsextra virgin olive oil
1lemonjuiced
1/2teaspoonSea Salt
1/2teaspoonBlack Pepper
1/4cupfresh mintchopped
Instructions
In medium bowl, combine Greek yogurt, garlic cloves, olive oil, lemon juice, salt, and pepper. Stir well to combine.
Prep your cucumbers - peel if desired, halve lengthwise and scoop out any seeds. Chop the cucumber and set aside.
Combine yogurt sauce with fresh cucumber and the chopped mint. Add a little fresh pepper to garnish and enjoy with pita chips, fresh vegetables, bell peppers, or serve on a Mediterranean salad!
