This vegan apple walnut salad is a great lunch or dinner salad or main dish. Full of plant protein, creamy dressing, and fresh crisp veggies!

For the Salad
- 1 apple diced
- 1 cup red cabbage shredded
- 3 stalks celery diced
- 1 14-ounce can No-Salt-Added Chickpeas drained and rinsed
- 1/2 cup spinach
- 1/2 cup chopped walnuts
For the Sweet Dijon Vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or agave nectar

In a large bowl, add the apple, cabbage, celery, chickpeas, spinach, and walnuts.
To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
Pour the dressing over the salad, and toss well to combine. Enjoy!
