Spicy Pineapple Salad with Jalapeno & Lime

This spicy pineapple salad is a bright and refreshing appetizer - with jalapeno peppers, cilantro, and a fresh lime vinaigrette dressing. It's sweet and perfectly spiced, a fantastic summer salad that's great to make in the winter to brighten up your table.

Ingredients
  

  • 1 large pineapple cored, peeled, and sliced (about 3 cups)
  • 1 large jalapeno pepper thinly sliced
  • 1/2 cup cilantro chopped
  • Pinch Sea Salt
  • 1/4 teaspoon fresh cracked pepper
  • 1 tablespoon olive oil
  • 2 limes juiced, about 2 tablespoons
  • 1 teaspoon honey

Instructions
 

  • Remove tough outer skin from pineapple, and remove the core from the fruit. You'll be left with the soft inner fruit. Slice into rings, and then into bite-sized pieces. Place them on a plate or bowl.
  • Add the thinly sliced (or chopped) jalapeno peppers, cilantro, salt and pepper.
  • In a small bowl, add the olive oil, lime juice, and honey - whisk well to combine. Pour the dressing over the salad.
  • Serve immediately, or cover and refrigerate up to 4 hours before serving.
