This 7 layer dip burrito recipe is a delicious take on a classic dip recipe! These burritos are tasty, creamy, loaded with vegetables, high in plant-based protein and are vegetarian.

Ingredients
  

  • 4 tortillas
  • 4 ounces sour cream a plant-based recipe below in the Notes section!
  • 1 cup refried beans
  • 1/2 cup salsa
  • 1 cup fresh tomatoes
  • 1 cup chili beans or taco filling
  • 1 cup Fresh chopped lettuce
  • 4 ounces cheese of choice can use a non-dairy blend, taco blend, cheddar, jalapeno cheese, etc

Instructions
 

  • On a plate, lay out your tortillas.
  • To each, add equal parts: sour cream, refried beans, salsa, chili or taco filling, tomatoes, lettuce, cheese, or any other toppings you have on hand (jalapenos, fajita vegetables, onions, etc.)
  • Roll up the burrito, tucking the sides into the center before rolling so the burrito holds the filling.
  • Enjoy as an easy lunch or snack - or serve with beans and rice for a full dinner meal
