Beet Powder Hummus (V, GF)
This beet powder hummus is a bright, healthy, and good-for-you snack! Hummus made with beet powder, chickpeas, garlic, and spices. This is one vegan, gluten free, and heart healthy snack you can feel good about eating.
- 2 tablespoons beet powder
- 2 15.5 ounce cans No Salt Added Chickpeas, plus the liquid
- 4 cloves garlic
- 1/4 cup pumpkin seeds
- 1 lemon juiced
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- Salt and Pepper to taste
Add all ingredients to a blender or food processor. Start by blending or pulsing on low speed, and ramp it up to medium/high until all ingredients are well mixed into a creamy hummus.
Place hummus in a serving dish and top with extra olive oil and pumpkin seeds.
Dip bread, crackers, or vegetables into this sweet and creamy hummus, enjoy!
