Hummus Toast with Quick Pickled Cucumber (Vegan, GF)
This hummus toast with cucumber combines creamy hummus with a quick pickled cucumber topping! A bight, crunchy, and fresh breakfast recipe! A great no-cook meal that is perfect for a simple and delicious breakfast, lunch, dinner, or snack.
- 1 cucumber thinly sliced
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 2 tablespoons water
- 4 slices sourdough bread use gluten free if GF
- 2 tablespoons hummus
In a bowl, add the cucumber, red wine vinegar, sugar, and salt. Allow to sit and quickly marinate for 5 minutes.
Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
Add a scoop of the marinated cucumbers to the top of each toast, garnishing with extra salt or pepper if desired.
Serve as a healthy breakfast or lunch, and enjoy!
