This sour cream cornbread recipe is light, fluffy, and ready in 30 minutes, made with sour cream, honey, and delicious spices. A great vegetarian side dish to eat with chili or stew, or just enjoy with a little honey and butter for breakfast.
Preheat the oven to 425 degrees Fahrenheit. Grease a 8 x 8 inch baking dish, and set aside.
In a large bowl, add the vegetable oil, sour cream, corn, eggs, honey, and chili flakes (if using). Mix well with a spoon to combine.
In a different mixing bowl, add the cornmeal, flour, sugar, baking powder, and salt. With a clean spoon, mix well to combine.
Take the bowl with your dry ingredients and mix them into the wet. Fold well to make a thick batter.
Pour batter into the greased baking dish. Place baking dish in the oven, and bake cornbread for 20-25 minutes until lightly browned on top.
Once cornbread is done, allow it cool on the counter for 15 minutes before slicing. Enjoy!

Additions and SubstitutionsIf you like a little spice and heat in your cornbread, I highly recommend adding the red chili pepper flakes. The chili flakes give a nice little kick to the cornbread and are totally optional. Or add 1/2 chopped jalapeño pepper into the wet ingredients.Any kind of sour cream will work for this recipe, or you could substitute yogurt instead. You could also substitute the vegetable oil for another light oil, like sunflower oil or olive oil.I like adding fresh or frozen corn in my cornbread mix because I like to see the pieces of corn in the bread as I enjoy it. However, if you don't have fresh, frozen, or canned corn, you can omit it for the recipe.
