This satay udon noodles recipe is a quick, inexpensive, and flavorful 15-minute lunch or dinner! Thick udon noodles are tossed in a perfectly sweet and savory peanut sauce - a great vegetarian and vegan meal idea.
Cook udon noodles according to package instructions. Save 1/3 cup of the cooking water, drain the rest, set the noodles aside, and return the pot to the stove top.
To the pot, add the peanut butter, chili sauce, lime juice, soy sauce, sriracha, and the reserved udon noodle cooking water. Stir well to combine.
Return the udon noodles to the pan and coat well in the sauce.
Add the crushed peanuts and green onions to the top of the noodles. Transfer to a dish and enjoy!

Additions and SubstitutionsYou can add in extra vegetables if you prefer - sauteed greens, baby bok choy, bell peppers, peapods, or cabbage if desired.Instead of sriracha you could also use hot sauce, cayenne pepper, chili flakes, or chili crisp!
