These delicious parsley noodles are a bright & fresh dinner, ready in 15 minutes! Served in a warm garlic and olive oil or butter sauce, and loaded with fresh greens. This is a great dinner recipe for parsley lovers, and has a fantastic flavor that makes this a great light dinner idea with fresh parsley.
Bring a large pot of water to a boil and cook noodles according to package instructions. Drain, rinse, and set aside.
In another pot, heat the olive oil over low heat. Add the garlic and sauté for 4 or 5 minutes until the garlic begins to brown, then squeeze in the lemon juice. Add the cooked noodles, and toss well to cover the pasta in the olive oil. Add salt and pepper, and toss in the fresh parsley. Toss well to combine all the ingredients.
To serve, dish noodles in a bowl, drizzle a little extra olive oil and salt/pepper to taste, and garnish with fresh parsley. Mangia!
