This Keto Smashed Egg Sandwich recipe is a hearty high protein sandwich made with hard boiled eggs, sprouts, and loads of spices! This easy and vegetarian low carb breakfast or lunch recipe is made with keto certified bread for a high fiber and keto meal that will keep you full.

Ingredients
  

  • 2 eggs hardboiled or poached
  • 2 slices low carb bread
  • 1/2 lime juiced
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1/4 teaspoon garlic powder
  • Sprouts
  • Sea Salt and Black Pepper

Instructions
 

  • Prepare the eggs: I used my easy method for hardboiling eggs here - but you could also poach or scramble them if you prefer. I find hardboiled eggs are great to meal prep for the week so if I have any extras by the weekend, this is my go-to low carb brunch idea!
  • Toast the bread: place the low carb bread in the toaster until golden brown.
  • Assemble the sandwich: to the toast, add the peeled hardboiled eggs and mash with a fork directly onto the toast.  Squeeze the fresh lime juice and top with red chili flakes, and garlic powder.
  • Add sprouts: top with a pile of fresh crunchy sprouts (or other low carb and keto vegetables of your choice!)
  • Salt salt and pepper if desired, and enjoy!
