White Chocolate Rice Krispie Treats are a great treat anytime: for a summer bbq to Christmas! Made with marshmallows & white chocolate chips. These treats are ready in 15 minutes so they are a great easy last minute dessert for a potluck or holiday party!
Line a large 9x9 glass baking dish with parchment paper, set aside. Also set aside about 1/2 cup of mini marshmallows, these will be used later in the recipe.
In a large pot, add the butter and remainder of the marshmallows on low heat. Stir for about 5-10 minutes until the ingredients have completely melted together.
Add the vanilla extract to the marshmallow mixture and stir well to combine.
Add the rice cereal, half of the white chocolate chips, and the extra 1/2 cup of marshmallows to the pot and mix well.
Pour the rice cereal mixture into the baking dish - and gently press the rice cereal down. Make sure to not pack down too hard, as the looser they are placed in the baking dish the softer the treats will be.
Sprinkle the top with the last half of the white chocolate chips. Wait for 30 minutes to cool, then cut, serve and enjoy!
