This rice cooker yellow rice recipe is a bright and satisfying side dish made with rice, fresh vegetables, & spices that cooks in the rice cooker!  This all purpose rice pilaf side dish is great as a Spanish rice without saffron to serve alongside your Taco Tuesday, or a delicious Greek yellow rice to serve with gyros or pita plates.  And it's vegan, gluten free, and made in one pot.

Equipment

  • Rice Cooker

Ingredients
  

  • 1 tablespoon vegetable oil
  • 2 cups basmati rice
  • 1/2 cup corn
  • 1/2 cup peas
  • 1/2 cup bell pepper
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon Himalayan sea salt
  • 2 cups water
  • Adobo spice to taste

Instructions
 

  • Add all ingredients to a rice cooker, and stir well to combine.
  • Set cook time for normal mode or 35 minutes for manual mode.
  • Once rice has finished cooking, fluff with a fork and serve.
