Caprese Spinach Salad

This caprese spinach salad recipe is a bright fresh appetizer, loaded with tomatoes and basil, & ready in less than 20 minutes. A simple way to impress your company. This salad is creamy, flavorful, and covered in a tangy balsamic vinaigrette dressing.

Ingredients
  

  • 5 ounces fresh baby spinach
  • 4 ounces fresh mozzarella cheese
  • 2 cups cherry tomatoes halved
  • 1/2 cup fresh basil cut into ribbons
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon tellicherry black pepper

Instructions
 

  • On a plate or in a bowl, add the fresh spinach, and mozzarella balls.
  • Slice tomatoes, and arrange them around the mozzarella.  I used a mix of cherry tomatoes for color - but pick the sweetest and most in-season tomatoes you can find (usually cherry tomatoes are my go-to off season).
  • Top with the fresh shredded basil. In a small bowl, the olive oil and balsamic vinegar. Drizzle over the salad and crack fresh black pepper over the salad.
  • Serve immediately, and enjoy!
