This caprese spinach salad recipe is a bright fresh appetizer, loaded with tomatoes and basil, & ready in less than 20 minutes. A simple way to impress your company. This salad is creamy, flavorful, and covered in a tangy balsamic vinaigrette dressing.
On a plate or in a bowl, add the fresh spinach, and mozzarella balls.
Slice tomatoes, and arrange them around the mozzarella. I used a mix of cherry tomatoes for color - but pick the sweetest and most in-season tomatoes you can find (usually cherry tomatoes are my go-to off season).
Top with the fresh shredded basil. In a small bowl, the olive oil and balsamic vinegar. Drizzle over the salad and crack fresh black pepper over the salad.
