Apricot Kolachy Cookies

These apricot kolachy cookies are light & buttery, sweet and delicious. A family recipe from my grandmother, that is the perfect dessert!

Ingredients
  

  • 8 ounces cream cheese softened recipe note says 'Use Philadelphia cream cheese, don't use 'cheap brand' and soften")
  • 1 cup butter softened
  • 2 cups all-purpose flour
  • 1/2 cup apricot jam
  • 1/2 cup Powdered Sugar for garnish

Instructions
 

  • Mix softened cream cheese and butter together. Add the flour and mix well to combine.
  • Preheat oven to 325 degrees Fahrenheit
  • Roll out dough onto a floured surface. Cut dough into 4-inch squares.
  • Fill each square with approximately 1/2 teaspoon apricot jam. Take diagonal corners and fold them over the jam, to make the kolachy shape.
  • Place the cookies onto a baking sheet lined with parchment paper. Bake cookies for 30 minutes until browned.
  • Allow cookies to cook before enjoying.

Notes

A Note on Forming the Cookies

My aunt recommends using tiny muffin cups instead of rolling. That way, you can line each up with the dough, and fill with the apricot jam and bake. It's a great shortcut to use if you don't want to roll out the dough by hand.
