This low sugar strawberry jam recipe is a bright, fresh, and tasty jam made with a fraction of the sugar of traditional recipes. Made from fresh or frozen strawberries, this fantastic jam is ready in about 30 minutes with less sweeteners.

  • 4 ounce mason jars

Ingredients
  

  • 1 lb strawberries stems removed
  • 1 large lemon juiced, about 1 tablespoon
  • 1 tablespoon sugar
  • 1 teaspoon chia seeds

Instructions
 

  • In a small saucepan, add the sliced strawberries and lemon juice. Place the saucepan over low heat, cover the pot with a lid, and gently simmer the strawberries for 10 minutes.
  • Mash with a fork, and add the sugar. Stir until sugar dissolves. Continue to simmer the strawberries for 20 more minutes, until they have broken down into jam. Add the chia seeds and stir.
  • Place the jam in a mason jar, and allow to cool. Refrigerate and enjoy the jam for up to 2 weeks.
