This low sugar strawberry jam recipe is a bright, fresh, and tasty jam made with a fraction of the sugar of traditional recipes. Made from fresh or frozen strawberries, this fantastic jam is ready in about 30 minutes with less sweeteners.
In a small saucepan, add the sliced strawberries and lemon juice. Place the saucepan over low heat, cover the pot with a lid, and gently simmer the strawberries for 10 minutes.
Mash with a fork, and add the sugar. Stir until sugar dissolves. Continue to simmer the strawberries for 20 more minutes, until they have broken down into jam. Add the chia seeds and stir.
Place the jam in a mason jar, and allow to cool. Refrigerate and enjoy the jam for up to 2 weeks.
