Quinoa Tacos

This quinoa tacos recipe is a great plant-based taco filling that is high in protein, fiber, and is vegan. Perfectly spiced taco 'meat' with your favorite toppings! Mix cooked quinoa with taco spices, and bake for a crispy texture.

Ingredients
  

  • 1 cup red quinoa
  • 2 cups water
  • 1 ounce taco seasoning
  • 6 tortillas
  • Toppings I like lettuce, tomato, red onions, avocado, jalapeno peppers, salsa or hot sauce, etc!

Instructions
 

  • Cook your quinoa. Cook quinoa on the stove top - add the quinoa to a pot with the water and salt. Bring to a boil, then reduce heat to a simmer and cover the pot with a lid. Allow the quinoa to cook for 15-20 minutes. Fluff with fork when done. Alternatively, you can cook the quinoa in a rice cooker, by following my recipe in the notes below.
  • Once quinoa is cooked, mix in the taco seasoning.  Stir well to combine.
  • Warm or char your tortillas, add a scoop of the quinoa taco filling, and load on with your favorite toppings. Enjoy!
