Ingredients
  

For the Salad

  • 4 cups baby spinach fresh
  • 1 cup cherry tomatoes halved
  • 1 14-ounce can No-Salt-Added Chickpeas drained and rinsed
  • 1/2 cup walnuts
  • 1/4 cup feta cheese

For the Dressing

  • 1/3 cup olive oil
  • 1 lemon juiced (about 1/3 cup lemon juice)
  • 2 cloves garlic pressed or finely minced
  • 1 tablespoon whole grain mustard or Dijon
  • 1 teaspoon honey
  • 1/4 teaspoon Sea Salt

Instructions
 

  • In a large bowl, combine washed fresh baby spinach, tomatoes, canned chickpeas, walnuts, and feta cheese.
  • In a mason jar, add all the dressing ingredients: olive oil, fresh lemon juice, mustard, honey, and garlic. Seal with an air right lid and shake well to combine.
  • Pour dressing over the salad, and toss well. Taste and adjust seasoning as needed, adding salt and pepper if desired.
