Avocado Mayo (Oil Free)

This avocado mayo recipe is vegan, oil free, and ready in 5 minutes! Just 3 ingredients for this all natural flavorful mayonnaise substitute.  I love adding this vegan mayonnaise to sandwiches, creamy salads, or dressings. A lighter version of mayo that is egg free, dairy free, and SO flavorful!

Ingredients
  

  • 1 large avocado pit removed and flesh scooped out
  • 2 lemons juiced, about 2 tablespoons
  • 2 tablespoons water plus more if needed

Instructions
 

  • Add the avocado, lemon juice, and water to a blender or food processor, and mix on low speed until the spread becomes creamy and thick. Taste and adjust seasoning, adding more lemon juice if needed.
  • Spread the avocado mayo on a sandwich, add to sauces to make them creamier, or enjoy as a veggie dip!
  • Enjoy within 24 hours.
