Hummus and Eggs on Toast

Hummus and Eggs on Toast is a simple and tasty breakfast recipe that takes 10 minutes to make, and is high in vegetarian protein!  A fantastic breakfast with hummus that is super easy but has a sophisticated and complex flavor. This brunch brilliantly layers textures: crispy toast, creamy hummus, and yolky eggs topped with bright fresh herbs. You can use any hummus you have, however I highly recommend this homemade hummus recipe which is ready in just 10 minutes!

Ingredients
  

For the Toast

  • 2 slices bread
  • 1/2 cup hummus see recipe below
  • 2 eggs
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon chili flakes

For the Hummus

  • 1 13.5 ounce can No-Salt-Added Chickpeas
  • 1/2 cup tahini
  • 1 medium lemon juiced
  • 2 cloves garlic
  • 1 teaspoon cumin
  • Pinch chili flakes
  • 2-4 tablespoons water

Instructions
 

  • Make the Hummus: if you are making the hummus from scratch you can add the chickpeas, tahini, lemon juice, garlic, cumin, pepper flakes, salt, to a food processor. Stream in the cold water until you get the perfect creamy texture. If you are using pre-made hummus, skip this step :)
  • Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  • To a greased frying pan, crack 2 eggs and cook until almost all of the egg has turned white. Flip the eggs and remove from heat, allowing the eggs to still cook for a bit in the hot pan.  Add fried egg to each slice of toast.
  • Top with fresh chopped parsley or basil, and an extra sprinkle of chili flakes. Serve as a healthy breakfast or lunch, and enjoy!
