This Garlic Mushroom Toast recipe is a savory filling breakfast with sautéed mushrooms and herbs, Low Calorie, vegan and gluten free. Hearty mushrooms are fried with herbs and garlic, and topped on freshly toasted bread of your choice. It's a fantastic weekend meal ready in about 15 minutes.
In a large pan, heat the olive oil over medium heat. Add the garlic and fry for 3-4 minutes until it begins to brown at the edges. Add the mushrooms, herbs de Provence, and sea salt, and sauté for 5 minutes more until the mushrooms begin to shrink.
Lower heat, cover, and sauté mushroom's for 4-5 minutes more.
Toast the bread in a toaster or under the broiler for 3 minutes. Top each slice of toast with 1/4 of the mushroom mixture, and add fresh parsley and red pepper flakes to garnish. Enjoy!
