These Smoked Hard Boiled Eggs are a fantastic vegetarian recipe for the electric smoker. Flavorful & high in protein - a great appetizer ready fast while your entrees cook.  I make these every time our electric smoker is on, and they always turn out amazing!

Ingredients
  

  • 12 large hardboiled eggs
  • 2 tablespoons olive oil
  • 2 tablespoons sauces I like BBQ and teriyaki
  • 1 tablespoon dry spices I like Montreal steak spice

Instructions
 

  • Set the electric smoker to 250 degrees Fahrenheit.
  • Peel hardboiled eggs, and slice them in half lengthwise.
  • Place the eggs yolk-side-up in a foil packet or a aluminum tray. If using a sauce, dip the egg halves completely in the sauce. If using a spice, drizzle a little olive oil on the eggs and add a pinch of spice so the spices/seasonings stick to the surface of the egg.  I like to use BBQ sauce and Montreal Steak spice for my eggs.
  • Place the eggs in an upper rack, and smoke for 1-2 hours. Do not leave the eggs longer than 2 hours, or they will become tough and rubbery.
