These Smoked Hard Boiled Eggs are a fantastic vegetarian recipe for the electric smoker. Flavorful & high in protein - a great appetizer ready fast while your entrees cook. I make these every time our electric smoker is on, and they always turn out amazing!
Set the electric smoker to 250 degrees Fahrenheit.
Peel hardboiled eggs, and slice them in half lengthwise.
Place the eggs yolk-side-up in a foil packet or a aluminum tray. If using a sauce, dip the egg halves completely in the sauce. If using a spice, drizzle a little olive oil on the eggs and add a pinch of spice so the spices/seasonings stick to the surface of the egg. I like to use BBQ sauce and Montreal Steak spice for my eggs.
Place the eggs in an upper rack, and smoke for 1-2 hours. Do not leave the eggs longer than 2 hours, or they will become tough and rubbery.
