Tofu Feta Cheese

This marinated dairy free feta cheese recipe is bright flavorful and great to have as a cheese substitute for caprese salad or on feta pasta.  Overnight marinated tofu packs all the flavor into the tofu. Enjoy as vegan feta crumbles, tofu feta cubes, or marinate the whole block for baked tofu pasta.

Ingredients
  

  • 1 16 ounce block tofu
  • 1/4 cup water
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup olive oil
  • 2 1/2 tablespoons Light Miso Paste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dried oregano
  • 1/4 teaspoon Sea salt & Black Pepper
  • 1/4 cup nutritional yeast

Instructions
 

  • Press your tofu - get as much moisture out of the tofu as possible, this press does the trick perfectly!
  • Cube the tofu into bite sized pieces. In a shallow baking dish or bowl, mix in the rest of the ingredients until the tofu is covered in the marinade.
  • Allow the tofu to marinate overnight for 8 hours minimum, up to 2 days maximum.
  • Serve in any dish you would use tofu in: Tofu Feta Caprese Salad, a vegan cheese board, on toast, or crumble on a salad.

Notes

*You can also leave your tofu in the whole block, or crumble it.  I prefer cubes, but any texture would work.
