Tofu Feta Pasta (Vegan TikTok Pasta)

Viral TikTok feta cheese pasta... but make it VEGAN!  This vegan baked feta pasta is bright, flavorful, and plant-based! A great dairy free alternative.  Serve with a thick slice of garlic bread and a hearty side salad for a completely delicious dinner.

Ingredients
  

  • 1 block marinated tofu feta *see Notes below for recipe
  • 3 cups cherry tomatoes
  • 5 cloves garlic
  • 1/2 teaspoon oregano
  • 2 tablespoons olive oil
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup chopped fresh basil
  • 8 cooked pasta of choice use gluten free
  • *1/2 cup coconut milk optional

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. In an 8x8 inch baking dish, add the marinated tofu feta, tomatoes, garlic, oregano, olive oil, salt, and pepper.  Place baking dish in the oven, and bake uncovered for 30 minutes or so until tomatoes have blistered and garlic cloves have begun to caramelize.
  • With a fork, mash the tomatoes and tofu together until a thick sauce begins to form.  Sprinkle the fresh basil on top of the pasta.
  • *OPTIONAL - for extra creaminess to mimic the feta cheese, you can add 1/2 cup full fat coconut milk to the sauce to give it a richer consistency.
  • Toss the pasta sauce in with pasta of your choice.  Garnish with additional fresh basil before serving.

Notes

Marinated Tofu Feta Recipe
1 block of tofu
1/4 cup fresh squeezed lemon juice
2 1/2 tablespoons of white miso paste
2 tablespoons of apple cider vinegar
1 teaspoon dried oregano
 
In an airtight container, add the whole black of tofu and top with lemon juice, miso paste, vinegar and oregano.  Add enough water to cover the tofu, and seal with airtight lid.  Allow tofu to marinate overnight or for 6-8 hours before using.
