Caramel Apple Overnight Oats (Vegan, Gluten Free, Meal Prep Recipe)

  • 1 recipe Baked Caramel Apples
  • 1 apples chopped into small bite-sized pieces
  • 2.5 cups Gluten Free oats
  • 1/4 cup flaxseed meal
  • 1/2 cup sliced almonds
  • 1/2 cup crushed walnuts
  • 2.5 cups plain unsweetened almond milk
  • 1 cup dairy-free Vanilla Yogurt


  • Prepare Baked Caramel Apples according to recipe!
  • Chop 1 fresh apple into bite-sized pieces, and add to a large bowl.
  • To the apple, add:  the oats, flaxseed meal, almonds, walnuts, almond milk, and yogurt.  Stir well to combine.
  • To assemble the oats: take 4 pint sized Mason jars.  Fill the bottom third with the oat mixture.  Fill the middle third with the Baked Caramel Apples.  And fill the top third with the oats again.  Repeat for each jar!
  • Seal jars, and refrigerate.  Oats will last up to 4 days in the fridge.
