  • 3 large carrots peeled and sliced
  • 1 tablespoon ginger peeled and diced
  • 2 green onions chopped
  • 3 cloves garlic peeled
  • 1/3 cup olive oil
  • 1/4 cup rice vinegar
  • 2 tablespoons  honey honey or sweeter of choice
  • 1 tablespoon  tamari or gluten free soy sauce

  • Add all ingredients to a blender, and puree until smooth.
  • Check dressing thickness and add more water, one tablespoon at a time, until desired consistency.
  • Serve over fresh lettuce or use as a marinade for tofu
