This Japanese creamy ginger dressing recipe is fantastic addition to your next salad. This bright & fresh recipe is loaded with flavorful ingredients like garlic, fresh ginger, carrots, green onions, honey, and rice vinegar for a delicious dressing.

3 large carrots peeled and sliced 1 tablespoon ginger peeled and diced 2 green onions chopped 3 cloves garlic peeled 1/3 cup olive oil 1/4 cup rice vinegar 2 tablespoons honey honey or sweeter of choice 1 tablespoon tamari or gluten free soy sauce 2-4 tablespoons water (or more if needed to thin dressing)

Add all ingredients to a blender, and puree until smooth.
Check dressing thickness and add more water, one tablespoon at a time, until desired consistency.
Serve over fresh lettuce or use as a marinade for tofu
Keep leftovers in an airtight container (I like to use a pint sized mason jar) and keep in the fridge for up to 1 week. Shake before serving.
