Sweet and savory, this grilled peach salad combines peaches, asparagus & summer squash with a simple homemade balsamic vinaigrette! Serve over fresh mixed greens for the perfect bite of summer.
Heat up an outdoor grill or an indoor grill pan. Place the sliced peach halves across the grill grates, and grill for 5-6 minutes until the peaches have nice grill marks. Set on a plate, and slice peaches into bite-sized pieces.
After the peaches, place the vegetables on the grill as well. Grill for 3-4 minutes or until the vegetables begin to have a nice char, then flipping. Set vegetables aside.
Add all the peach salad dressing ingredients to a mason jar or small bowl. Mix well to combine.
To serve: add mixed greens to a large serving plate or serving bowl. Top with the sliced grilled peaches and vegetables on a bed of fresh greens, and dress with the salad dressing. Top with a crumbled cheese and enjoy!
Store leftover peaches or salad in an airtight container for up to 1 day.
