Instant Pot Mashed Potatoes with Skin

Ingredients
  

  • 8 potatoes about 3 lbs, skins on diced into small pieces
  • 12 cloves garlic whole
  • 2 cups water
  • 1 cup milk you can choose any variety (whole, 2%, half & half)
  • 1/4 cup sour cream
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • sea salt and black pepper to taste

Instructions
 

  • Add the diced potatoes and the water to the Instant Pot.  Set on High or Manual for 8 minutes.
  • Once finished cooking, do a quick release.  Keep the Instant Pot on ‘warm’ setting for the next few steps. Drain the water from the potatoes, and place the potatoes back in the Instant Pot.
  • Stir in the milk, butter, sour cream, and garlic powder.
  • Using a potato masher, whip until there are no more lumps in the potatoes.
  • Taste and adjust seasonings, adding salt and pepper if desired.
