Turkey Apple Salad Sandwich

This turkey apple salad sandwich recipe is a creamy and crunchy turkey sandwich without mayo!  A healthy recipe to use leftover turkey after Thanksgiving.  This simple recipe comes together in about 10 minutes if you have cooked leftover turkey, and is a delicious lunch or light dinner the whole family will love.

  • In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
  • Add the walnuts, and fold into the the turkey salad.
  • Toast slices of your favorite bread. Add a handful of greens (I like arugula or spinach), and about 3/4 cup of the turkey salad on each sandwich. Slice in half, and dig in!
