This turkey apple salad sandwich recipe is a creamy and crunchy turkey sandwich without mayo! A great recipe to use leftover turkey after Thanksgiving. This simple recipe comes together in about 10 minutes if you have cooked leftover turkey, and is a delicious lunch or light dinner the whole family will love.
In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
Add the walnuts, and fold into the the turkey salad.
Toast slices of your favorite bread. Add a handful of greens (I like arugula or spinach), and about 3/4 cup of the turkey salad on each sandwich. Slice in half, and dig in!
