Sweet Cucumber Chutney

This sweet cucumber chutney recipe is a bright and fresh condiment that takes 5 minutes and is vegan, gluten free, and loaded with flavor.  This chutney can be used as a replacement for relish, on top of crackers or flat bread, or added to a grain bowl. A vibrant and fresh recipe for your summer garden cucumbers!

Ingredients
  

  • 1 cucumber diced
  • 1/4 cup roasted red peppers chopped
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon agave nectar
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1/2 cup cilantro
  • Sea Salt and Black Pepper

Instructions
 

  • In jar with an airtight lid, add all the ingredients together. Seal jar with the lid and shake well to combine.
  • Taste, and add salt and pepper if desired. Store in the fridge for 3 to 4 days.
