Green Goddess Pesto

This delicious green goddess pesto recipe combines loads of fresh herbs, greens, and spices! A fantastic addition to pastas, pizzas, or garlic bread.  This batch of pesto is bright, flavorful, and versatile - and also vegan and gluten free so everyone at the table can enjoy.

Ingredients
  

  • 1 cup basil
  • 1 cup fresh parsley chopped
  • 1 cup fresh spinach
  • 1 cup fresh kale
  • 1/4 cup sage
  • 6 cloves garlic roughly chopped
  • 1/2 cup olive oil
  • 1 cup walnuts toasted
  • 1 lemon juiced
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper
  • 1 cup bread gluten free crumbs optional
  • Crushed Red Pepper Flakes optional for heat

Instructions
 

  • In a blender or food processor add the basil, parsley, spinach, kale, sage, garlic, olive oil, walnuts, lemon juice, salt, pepper, and bread crumbs or pepper flakes if using.
  • Pulse in quick bursts until the pesto becomes a thick paste. If it is too thick or isn't blending properly, add an additional tablespoon of olive oil until it has thinned out.
  • Toss with cooked pasta, stir into Risotto, or add a scoop to soup.

Notes

Dietary Modifications

  • To make gluten free - ensure any and all ingredients you are using are certified gluten free before adding.
  • This recipe is vegan and vegetarian. If you are not plant-based you can add optional parmesan cheese to the pesto as well.
