Avocado Toast Breakfast Sandwich

This avocado toast breakfast sandwich is a brunch favorite! A protien packed breakfast sandwich with creamy avocado toast, egg, and spices.  A delicious and healthy way to turn basic avo toast into something #extra!

Ingredients
  

  • 1 tablespoon butter
  • 1 egg
  • 2 slices bread gluten free
  • 1/2 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 teaspoon everything bagel seasoning
  • 1/4 teaspoon garlic powder

Instructions
 

  • In a frying pan, heat butter over low heat until melted. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
  • In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, everything bagel seasoning, and garlic powder and stir well to combine. Set aside.
  • Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado mixture, diving it evenly between the bread slices.  Add the fried egg between the avocado toasts, close like a sandwich and enjoy!
