Prepare pie crust according to package directions, place in a 9 inch pie dish or pie pan, and set aside.
In a medium bowl, scramble together the eggs, milk, Italian seasoning, salt and pepper. Add half of the fresh spinach and stir again.
Pour egg mixture into the pie crust. Top with the remaining spinach and parmesan cheese.
Preheat the oven to 375 degrees Fahrenheit. Bake quiche for 40-50 minutes in the preheated oven, or until the top of the quiche and the edges of the crust are golden brown, and the center is cooked through.
Allow quiche to cool at room temperature for 15 minutes before slicing. Top with more shredded parmesan right before serving, and enjoy.
