Drain and rinse canned jackfruit and pat dry. Add the jackfruit mixture to a food processor and pulse a few times until the jackfruit pieces resemble the texture of pulled pork.
In a large skillet heat the olive oil over medium heat, and sauté the red onion and garlic for 5 minutes until they begin to soften. Add the shredded jackfruit and sauté for an additional 5 minutes. Add the chili powder, salt, chili flakes, vegetable stock, lime juice, orange juice, and maple syrup (if adding) and simmer for 20 minutes.
Scoop some jackfruit onto a corn tortillas or flour tortillas, add more sauce if desired! Garnish with your favorite toppings like: lime wedges, cilantro, and white onion.
