This dairy free macaroni salad recipe is a creamy delicious side dish to serve at a BBQ, cookout, or potluck. Classic deli-style flavor with lots of added vegetables for a bright and fresh crunch in each bite.

Ingredients
  

  • 1 16 ounce box macaroni use gluten free if desired
  • 1/2 small onion diced (about 1/2 cup)
  • 2 stalks celery diced (about 1/2 cup)
  • 2 large carrots diced (about 1/2 cup)
  • 1/2 bell pepper diced (about 1/4 cup)
  • 1 cup vegan mayo plain nonfat
  • 2 tablespoons sweet relish diced, or use relish
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sugar
  • Sea Salt and Black Pepper

Instructions
 

  • Cook macaroni noodles according to package instructions.  Drain, rinse in a colander under cool water.
  • In a large mixing bowl, add the macaroni noodles, onion, carrots, celery, bell pepper, vegan mayo, relish, mustard, apple cider vinegar, and sugar.  Mix well to combine all ingredients.  Taste and add salt and pepper if desired.
  • Cover and refrigerate for at least an hour before serving.
