This Vegetarian French Onion Soup recipe is sweet, flavorful, & decadent. Loaded with soft yellow onions, good white wine, French herbs, and vegetable stock. Top this soup with a thick slice of homemade sourdough bread and heaps of gruyere cheese for a gourmet meal ready in no time. Serve with a side salad or main course to make this a complete dinner.
1/2cupgruyere cheesegrated, or mozzerella if you cannot find gruyere
Instructions
Set your Wolf Gourmet Multi-Function Cooker to the 'Sear/Sauté ' mode, then select 'Medium'. Add the butter and the sliced onions, and sauté for 30 to 45 minutes until the onions have caramelized to a deep brown. Sauté with the lid removed, and stir occasionally.
Once the onions have caramelized, add the wine directly into the pan, and stir with a wooden spoon, scraping and brown bits off the bottom of the pan. Add the garlic, Herbs de Provence, and vegetable stock. Cover the pot, and switch the multi-cooker to Manual Mode. Select 'Medium' again, and slow cook for 2-3 hours until onions are soft and falling apart in the soup broth. Taste, and add salt and pepper if desired.
Just before serving, slice your bread and place a heaping pinch of gruyere cheese on top. Place the bread and cheese under the broiler for 2-3 minutes until the cheese begins to brown and bubble.
Serve the hot soup with a cheese toast on top of the soup, or on a place next to the soup, and garnish with herbs.
