Turkey Salad with Greek Yogurt

This turkey salad with yogurt is a creamy and crunchy turkey salad without mayo!  A great leftover turkey lunch recipe as a salad, sandwich, or wrap.  This simple recipe comes together in about 10 minutes if you have cooked leftover turkey, and is a delicious meal the whole family will love.

Ingredients
  

  • 2 cups cooked turkey breast shredded or diced
  • 1 apple diced, I used a honey crisp apple
  • 2 stalks celery chopped
  • 1 cup plain Greek Yogurt I used fat free
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon Sea Salt
  • 1/2 cup walnuts crushed
  • 1/2 teaspoon Black Pepper
  • 1/2 cup fresh parsley chopped

Instructions
 

  • In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
  • Add the walnuts and parsley, and fold into the the turkey salad.
  • Serve over arugula, spinach, or on a wrap and enjoy!
