This bruschetta pasta salad is a fresh and flavorful side dish for summer made with fresh tomatoes, basil, and a sweet vinaigrette. A bright and summery pasta salad loaded with veggies and sweet tomatoes in each bite.

Ingredients
  

For the Bruschetta

  • 1/3 cup olive oil
  • 2 cloves garlic minced
  • 8 fresh tomatoes diced
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup basil chopped

For the Pasta Salad

  • 1 16 ounce box pasta
  • 4 cups fresh baby spinach
  • 1 cup basil chopped

Instructions
 

  • Cook pasta according to package instructions. Drain and set aside to cool.
  • In a large bowl, add all bruschetta ingredients to a bowl and toss well to combine.
  • To the bruschetta, add the cooked pasta, spinach, and basil. Taste and adjust seasoning as needed... Mangia!
