Pizza Baked Beans (Vegetarian)

These pizza baked beans are bright and flavorful, satisfying and cheesy! A fun twist on baked beans, and a great recipe for leftover pizza sauce.  These pizza beans make a great lunch, dinner side dish, or a snack. Add your favorite pizza toppings right into the recipe - these beans can be customized for anyone.

Ingredients
  

  • 3 cans low sodium Great Northern or Navy Beans or 4 cups cooked beans
  • 1 tablespoon olive oil
  • 1/2 sweet onion sliced
  • 2 cloves garlic minced
  • 1 14 ounce Diced Tomatoes
  • 1 cup pizza sauce
  • 1 cup pizza toppings of choice: I used mushrooms and roasted bell pepper
  • 2/3 cup Vegetable Stock
  • 2 cups mozzarella cheese
  • 1/2 cup fresh parsley

Instructions
 

  • Drain and rinse beans in a collander, set aside.
  • In a Dutch oven heat the olive oil over low heat. Add the onion and garlic and saute for 5 or 6 minutes until the veggies begin to soften.  Add the diced tomatoes, pizza sauce, pizza toppings, and vegetable stock and simmer on medium heat for 10 minutes so the tomatoes cook through.
  • Preheat the oven to 400 degrees Fahrenheit. Add the beans to the dutch oven and stir well to combine. Top with cheese, and bake uncovered for 15 to 20 minutes until the cheese begins to bubble. Top with parsley and enjoy!
