Ingredients

  • 2 16 ounce chicken breasts, cut into 1 inch cubes *
  • 1.5 cups all-purpose flour
  • 3 eggs
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon Sea Salt
  • 1/4 cup sunflower oil or other high heat oil
  • 1/2 cup Raw Honey Garlic Sauce recipe below

Instructions

  • Preheat the oven to 425 degrees Fahrenheit.  Line a large sheet pan (or two smaller sheet pans) with parchment paper, and add 2 tablespoons of sunflower oil to each pan, tilt pan to coat the parchment paper evenly with the oil.  Set aside.
  • In a medium bowl, mix the flour, paprika, garlic powder, onion powder, Italian seasoning, cayenne pepper, and salt.
  • In another medium bowl, crack the eggs and scramble well to combine.
  • To bread the chicken, dip in the flour mixture, then egg, then flour again.  Place the dredged nuggets on the sheet pan in an even layer.  Repeat for all pieces of chicken.
  • Place the chicken in the oven and bake for 15 minutes, flip, and bake for another 5.  Chicken should be cooked through and golden brown on the outside.
  • Pour honey garlic sauce over chicken, or sip each nugget into the sauce before eating.  Enjoy!

Notes

*There are so many amazing vegan chicken options out there - if you are plant-based and don't eat meat, you can substitute any of those.  You can also use tofu, tempeh, seitan, or  soy curls too.  The plant-based possibilities are endless!
