This vegan apple walnut salad is a great lunch or dinner salad or main dish. Full of plant protein, creamy dressing, and fresh crisp veggies!

Ingredients
  

For the Salad

  • 1 apple diced
  • 1 cup red cabbage shredded
  • 3 stalks celery diced
  • 1 14-ounce can No-Salt-Added Chickpeas drained and rinsed
  • 1/2 cup spinach
  • 1/2 cup chopped walnuts

For the Sweet Dijon Vinaigrette

  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup or agave nectar

Instructions
 

  • In a large bowl, add the apple, cabbage, celery, chickpeas, spinach, and walnuts.
  • To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
  • Pour the dressing over the salad, and toss well to combine. Enjoy!
