M and M Cookie Bars

These M&M Cookie Bars are a sweet treat made with pantry staple ingredients! Warm and gooey, these bars are fun to make AND to eat.

Ingredients
  

  • 1 cup unsalted butter 2 sticks, melted can use Dairy Free
  • 1/2 brown sugar
  • 1/2 granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs can use egg substitute
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour can use gluten free baking mix
  • 1/2 teaspoon Sea Salt
  • 1 cup M&Ms plus more to top

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.  Line a 9x13 baking dish with parchment paper.
  • Melt butter in a suacepan, or in a oven safe bowl
  • In a large mixing bowl, add the melted butter, brown sugar, granulated sugar, vanilla extract, and eggs and whisk to combine.
  • Add the baking soda, flour, salt, and the M&Ms (making sure to reserve a few for the top!) And stir well to combine into a dough.
  • Add dough to the baking dish, and bake at 350 for 30-35 minutes.
  • Remove from the oven, and allow cookie bars to cool for at least an hour before eating.

Notes

Dietary Modifications

  • To make these cookie bars gluten free, just make sure to use a gluten-free flour or baking mix.  Also make sure the chocolate candies do not contain gluten.
  • To make these vegan, use a plant-based butter and egg substitute.  I like to use a flax egg (1 tablespoon flax seed meal mixed with 1 tablespoon water) or apple sauce instead of the egg.
