This Vegan One Pot Pasta recipe is ready in under 30 minutes, and is pantry staple friendly with tomatoes, olives, artichoke hearts, and roasted red pepper! This simple one pot pasta is one of our favorite dairy free Mediterranean recipes that's weeknight friendly.

Ingredients
  

  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 1 sweet onion diced
  • 8 ounces mushrooms sliced
  • 1/2 cup kalamata olives chopped
  • 1 cup artichoke hearts
  • 1/2 cup roasted red peppers chopped
  • 1 6-ounce can tomato paste
  • 1 14 ounce can Diced Tomatoes with juice
  • 1 16 ounce box rotini pasta
  • 8 cups Low Sodium Vegetable Stock
  • 1 teaspoon oregano
  • 2 tablespoons fresh basil julienned
  • Sea Salt and Black Pepper
  • Optional Vegan cheese to top

Instructions
 

  • In a large pot, heat the olive oil over low heat.  Add the garlic and onions and sauté on low heat for 5-6 minutes until vegetables begin to soften
  • .Add the rest of the ingredients to the pot and stir well to combine.  Bring to a boil, then reduce to a simmer.  Cook over low heat for about 20 minutes, stirring frequently.
  • Top with Extra freshly julienned basil or vegan parmesan cheese. Serve hot!
