This peach overnight oats recipe is a healthy & filling make-ahead breakfast that can be made with fresh or frozen peaches. Make the night before and enjoy for a quick on-the-go morning meal! This recipe can be made with fresh ripe peaches during the summer, or frozen fruit during the winter when peaches aren't in season.
Chop the peaches into small bite-sized pieces, about 1/2 inch.
In a large bowl, add the oats, the coconut oil, chopped peaches, cinnamon, brown sugar, walnuts, almond milk, and yogurt. Stir well to combine.
To assemble the oats: take 4 pint sized Mason jars. Fill with the oat mixture, top with additional sliced or shopped peaches as desired. Repeat for each jar.
