This Tomato Cucumber Mint Salad recipe is a bright & fresh salad, a refreshing summer side dish or appetizer - a great garden recipe to make with homegrown produce. This salad is tossed with a simple red wine vinaigrette for a simple salad that goes quickly! This fantastic cucumber and tomato salad is ready in 10 minutes, and requires no cooking. It's a great salad without lettuce, that has tons of flavor from the fresh mint. Ingredients
  

  • 2 large tomatoes or 2 cups cherry tomatoes, chopped
  • 2 large cucumbers chopped
  • 1/2 cup mint leaves
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic salt

Instructions
 

  • In a large bowl, add the chopped tomatoes, cucumber, and mint leaves.
  • Add the red wine vinegar, olive oil, sugar, oregano, and garlic salt. Toss well to combine.
  • Refrigerate salad for at least 1 hour. Toss well again before serving.
