Creamy Lemon Smoothie

This lemon smoothie recipe is loaded with fruit, plant based protein, and makes a great breakfast or post-work out drink! Vegan & dairy free.  This smoothie is made with fiber-rich ingredients and tasty plant based protein to keep you satisfied until lunch. A bright, fresh, and delicious smoothie ready in just 5 minutes. I used the whole lemon for this recipe: rind and all!

Ingredients
  

  • 2 frozen bananas
  • 1 small lemon whole, with the peel!
  • 2 cups plain unsweetened almond milk or any plant-based milk of choice
  • 2 dates
  • 1 scoop Vanilla Protein Powder
  • 1 tablespoon ground flaxseeds
  • 1/2 cup ice

Instructions
 

  • Add all ingredients to a high speed blender. If you have a high-speed blender, you can add the lemon with the peel!  If not, zest the lemon and add the juice, and discard the rest.
  • Blend all ingredients on high speed until you get a smooth consistency. Pour into your favorite glass or mason jar and enjoy.

Notes

A Note On Blending Lemons

I use this Vitamix Blender for all my smoothies , it can blend anything... no seriously, anything! I add the entire lemon to this smoothie - peel and all!  If you don't have a high-speed blender (like a Vitamix or Ninja system, etc.), then you can zest 1 lemon, then add the juice to the smoothie. You'll get the same flavor, but not as many nutrients as consuming the whole lemon.
