Oven Hash Browns

This oven hash browns recipe is crispy, crunchy, and easy to bake. Frozen hash browns crisp in a skillet with onion, garlic, and herbs. A great breakfast or brunch recipe that everyone will love. The oven does most of the work so you can prep other breakfast favorites like eggs, bacon, or fruit salad.  This hash brown bake is vegetarian, gluten free, and vegan.

Equipment

  • Oven-Safe Cast Iron Skillet, or Sheet Pan Directions for both are below

Ingredients
  

  • 2 tablespoons olive oil
  • 1 lb bag frozen hash browns
  • 1/2 cup red onion sliced
  • 3 cloves garlic minced
  • 1 bell pepper sliced
  • 1/2 teaspoon Montreal steak spice
  • 1/4 cup fresh parsley

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Skillet Version: add olive oil, onion, and garlic to an oven-safe cast iron skillet. Place the skillet on the stove, and sauté onions and garlic for 5-6 minutes over medium heat until they just begin to brown. Add the hash browns, Montreal Steak Spice and toss well to combine. Skip to step 4.
  • Sheet Pan Version: Skip the skillet step above, and add add the olive oil, hash browns, onion, garlic, bell pepper, and Montreal steak spice to a sheet pan. Toss well so all ingredients are mixed and well combined.
  • Bake your skillet or sheet pan for 20 minutes.  Carefully remove skillet/pan from oven (it will be very hot), flip the hash browns, and place back in oven. Turn heat down to 375 and bake for an additional 10 minutes.
  • Remove skillet/pan from oven and sprinkle the hash browns with fresh parsley... enjoy!

Notes

  • This recipe is vegan, vegetarian, dairy free, and Whole30 approved!
  • This recipe is gluten free, but be sure to check all the ingredients (like your spice blend, frozen potatoes, or toppings) just in case, to make sure everything is certified GF
